If you do not know anyone who went on a trip similar to the one that you are interested in, ask for references from past customers. Furthermore, check the affiliations of the agent to see if they are credible.
Go over the itinerary with the travel agent to see what you are getting for the money you will spend. The best all inclusive travel packages are the ones that make full use of the time spent on the trip. Look for activities that let you visit landmarks and get a taste of the local culture. At the same, make sure that you have enough rest periods during the trip.

Does it have to be all-inclusive? I booked my last Argentina vacation with a travel agent who got us the hotel, transfers, international flights, domestic flights (we went to Iguazu, Buenos Aires, and Mendoza) within Argentina, and a few tours. The rest we just paid for ourselves when we got there. If you google travel agent and the area you want to go to (like Peru, Colombia, etc.), you'll find ones that specialize and can book almost everything for you in advance.
You could start you own online travel business through a host agency. It would eliminate the headaches your having. Working through a host agency, you can eliminate the enormous expense and risk of starting a travel agency, but get all of the rewards. The training is provided and you can get to the fun stuff quickly (selling travel).
This is why my wife and I started our own online travel business. We’ve looked for years for a home based business and this is the first thing that made sense to us. The company that we work through is publicly traded, SEC regulated, is a member of DSA, and even offers health insurance. They even send their top agents on a cruise to the Bahamas. No one else does this. We love this business!

Start in Split and travel down the coast towards Dubrovnik on the Jadrolinjia (ferry) to each destination. The scenery on your voyage is absolutely breathtaking.
Korcula is more "old school" (less touristy) than Hvar Town (if going to Hvar, definitely check out Stari Grad), Split and Dubrovink. There are not as many hotel options and expect them to be between 2 & 3 stars, as opposed to the Suncani hotels in Hvar Town or several in Dubrovnik. This is important to some people, so I am just throwing the information out there. In Korcula, you must go to a wonderful local bar/restaurant called Briskula and ask the owner (Domi) to try the homemade white wine. Croatia has the best homemade wine!
Hvar Town is becoming a very trendy destination and is packed every weekend in the summer with "beautiful people". This Ibiza but smaller.
Any other questions, let me know. It's cheaper to travel in May and September. If you get a chance, stop by the capital city of Zagreb. Its a much more easy-going and much less touristy than many other European capitals.
