Man, i guess it is up to you to decide such a complex answer, cause is diferent travels, you know, travelling without any contact in local area is crazy decision but is more discovery…
But if i can give you some advice for a cheap and reliable travel I suggest you to contact an local agency that knows the place.. cause, you know, this world is crazy and you never know what are really happening there.
In my last travel to Rio de Janeiro on vacations i bought everything from a recommended webagency, so my trip was almost 50% cheaper than buy directly or from other agency… it means that we have really diferent prices for the same thing.
I prefer to find global portals but with local team in each local destination, for example in Rio I use http://riodejaneiro-hotels.travel they are a agency from whl.travel global portal.

I'll start with the Food, there are several places in Disneyland that are a great price for Lunch and Dinner and because the meals are so big at some of these places I would share with your 3 year old, I go to Disneyland quite often and I share all my meals with my boyfriend and we both end up really full. If you really don't feel like sharing and want to get kids meals for him allot of the restaurants and counter services have a Kid's Meal and a Toddler meal depending on how much you son eats the Toddler meal is about $3.50 and the Kid's at $6.50 and they both include a drink. Honestly once you see the size of the meals at Disneyland I'm sure you will end up deciding on sharing.
My Favorite places for Lunch and Dinner are Rancho del Zocalo it is mexican food and is great portions if you were to get a meal and a drink and share with your son, because they also have refills you would spend about $10-15 for everything.
Cafe Orleans is great for lunch because even though some of there meals are about $15.00 a piece I go there and get a couple of starters for lunch like Gumbo & Pommes Frites and get a lunch for $10.00. It's an idea you can use at allot of places get a couple of starters and it is sure to fill you and your son up for lunch.
A great spot for Dinner is PCH Grill it is at Paradise Pier and is about a 10 minute walk but they have great food and great prices. Here is a great site that I've always use it has the menu's for all of the Disneyland Resort and prices this way you can look at it and decide what you think is best.

A money saving tip is to bring along a water bottle for you and your son so one you stay hydrated and also so you don't have to pay for drinks the whole time. If your son doesn't like to drink just water you can get a box of a flavored drink and mix it into the water.
Another thing would to bring a snack that he like's that way if you are standing in a line or take a break you can pull out a snack.
If you are a Coffee drinker you can get a reg. coffee at Blue Ribbon Bakery and if you save your receipt you can get a free refill al day that is sure to save you money.
As far as souvenirs there is and such there are a couple things you can do one is if you what an autograph book you can make one for allot cheaper then they sell them, go to Target or Walmart and get a notebook then decorate it in the characters your son like's he'll have something more personal then the books that they sell.
If you want to get a shirt there it is about $15.00-35.00 depending on the shirt your are looking for, Toys can be anything from $5.00-50.00 depending on the toy of chose, if you have your heart set on getting something from Disneyland I would plan at least $50.00 for each of .
There is a Character Warehouse about 10-15 minutes away and they have allot of stuff that Disneyland sent to them and there shirts and toys are allot cheaper you could get something for your son there and then surprise him with it mid way through and that way he still has something special to celebrate the time at Disneyland.
Also a couple of free things he may like if you are celebrating something Special make sure to go by City Hall in Disneyland and get your free button, also you can ride the Fire engine down Main Street and after they will give your son a Jr. Firefighter Sticker with Mickey on it, I am sure he would love what little boy doesn't want to be a Firefighter.

I really thought about helping you out here, just because it would be fun to write. Then I looked at your profile and see that:
1. You answer other people's questions so obviously without care and thought and apparently just for points so you can go ask more questions.
and
2. The people that are gracious enough to assist you or answer your questions most of the time don't even recieve the courtesy of you selecting the "best answer" but they are instead selected by voters.
So instead I decide that if you are not interested in doing the right, then why in the world should anyone be interested in helping you?
You don't say where you're from, so I don't know what you're used to. Things to keep in mind are:
1) Outside of large cities, public transit is usually nonexistent. That won't be a problem for the route you describe, though; I think even your TX & Lousiana cities are covered by Greyhound etc.. But still, make sure there really is bus service for the things you want to see in town. Amtrak is helpful for the Northeast. If you have the time, I'd suggest it for your SF-Chicago leg so you can actually see the country.
2) Also make sure there really are low-priced places to stay in the cities you're visiting. They can be scant, so plan ahead on that.
3) December and January can get snowy and very cold here. For example, I live about 200 miles west of Chicago, and this morning the temperature was 6 degrees below zero, Fahrenheit. Be prepared. This can be an issue for Chicago, Cleveland, Pittsburgh, and the Northeast.

I understand your need to save money. But your husband is right, there are some scary, smelly, people on the Greyhound. I assure you, that you will not enjoy a minute of it. Especially a long trip from TX to FL. My advice to you, is to find another way to save money. If you think you can handle it, go for it. But I guarantee you will NEVER do it again. That is something normal people do only ONCE, and it's only done ONCE for good reason.
I personally would rather walk from TX to FL.
One of the most expensive aspects of Disney is the food! I would either look into getting a dining plan, which will allow you to eat onsite at different parks and hotels for meals at a discount, or bring ( or buy from a local convenience store or grocery store) some basic breakfast or lunch items so that you can eat some small meals or snacks in your rooms. That way you could splurge a little more on dinner or eat at some of the fun theme restaurants on-site.
You should absolutely get park-hopper tickets (unless you're just planning on only going to Epcot), as tiickets are probably the most expensive part of Disney. Staying on Disney property is definitely a lot of fun and enhances the experience, but just keep in mind that the Extra Magic Park hours are not for every park every night. They rotate parks each night, so that will depend on which parks you are planning to visit and when.

Try to buy your tickets about 90 days before the departure date. That's when they're cheapest.
Do a lot of research on different travel websites. Also, you can get A LOT of great deals if you are in college or under 26. Best of luck!
